Tomat merupakan bahan pangan yang mudah rusak setelah dipanen. Salah satu alternatif untuk meningkatkan umur simpan tomat adalah dengan mengolahnya menjadi produk seperti jus. Jus merupakan konsentrat buah atau sayuran yang diperoleh melalui proses penghancuran, penumbukan dan pengepresan bahan. Ukuran lubang saringan (screen) dan kecepatan pulper berperan penting dalam menentukan kualitas jus tomat. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh ukuran screen dan pemekatan terhadap kualitas jus tomat. Penelitian dilaksanakan di Laboratorium Bioprocess Technology, Asian Institute of Technology pada bulan November 2014. Rancangan perlakuan yang digunakan adalah rancangan acak lengkap dengan faktor perlakuan adalah ukuran screen yang berbeda yaitu 0,5; 1,0; dan 1,5 mm dengan 3 kali ulangan. Hasil penelitian menunjukkan rendemen 66,11 – 73,33%; total padatan 4,74 – 4,84%; total padatan terlarut 3,38 – 3,51 oBrix; pH 4,37 – 3,40; pulp/serum rasio 18,58 – 36,67%; consistency (m) 0,35 – 1,59; flow behavior 0,17 – 0,37. Analisa warna L, a*, dan b* berturut-turut adalah 30,13 – 32,20; 29,69 – 34,37; dan 28,12 – 31,28. Hasil analisa ragam menunjukkan bahwa ukuran saringan tidak berpengaruh nyata terhadap total padatan, total padatan terlarut, pH, warna (L, a*), concistency (m) dan flow behavior (n). Perlakuan berpengaruh nyata (p<0,05) terhadap pulp/serum rasio, rendemen, dan warna (b*). Proses pemekatan (concentrating process) menyebabkan peningkatan total padatan terlarut dan membuat warna jus semakin gelap.

ABSTRACT
Tomato is perishables food crops. An alternative to improve its shelf life is by processing into another product such as juice. Juice is the fluid expressed from plant material by crushing, comminuting and pressing. Screen sizes and speed of the pulpier finisher have significant influence on the quality of tomato juice. The objective of this experiment was determining the effects of screen sizes and evaporation on the quality of tomato juice. The research was conducted in Bioprocess Technology Laboratory, Asian Institute of Technology on November 2014. Three different screen sizes (0.5; 1.0; and 1.5 mm) used as treatments using completely Randomized Design with 3 replications. The results showed that jus yield were 66.11 – 73.33%; total solid were 4.74 – 4.84%; total soluble solid (TSS) were 3.38 – 3.51 o Brix; pH were 4.37 – 3.40; pulp/serum ratio were 18.58 – 36.67%; consistency (m) were 0.35 – 1.59, flow behavior were 0.17 – 0.37. Color L, a*, and b* were 30.13 – 32.20, 29.69 – 34.37, and 28.12 – 31.28, respectively. The screen size did not affect total solid, TSS, pH, color (L,a*), consistency (m) and flow behavior (n). It significantly affected pulp-serum ratio, juice yield, and color (b*). Concentrating process increased TSS and darkened the color.
