Trenggalek Regency has a superior commodity of sweet star fruit (Averrhoa carambola L.). On general sweet star fruit sold fresh, and shelf life of star fruit is 3-4 days. The local community has not utilized it as a product, one way to extend the shelf life of sweet star fruit is by processing them into a fruit leather. Fruit leather made from sweet star fruit has weak plasticity so it needs of carrageenan as a gelling agent. The study aimed to analyze the effect of carrageenan on organoleptic and chemical properties. This study used Randomized Block Design (RBD) with six treatment, without carrageenan (control), 0,3% (K1), 0,6% (K2), 0,9% (K3), 1,2% (K4), 1,5%(K5). The optinum formulation for sweet star fruit leather with addition carrageenan 0,6% (K2).
